A High Protein Easy Guacamole
We all love guacamole, but it is very high in fat and does not provide any protein to keep us full. Try adding some heart healthy plant protein to make it more nutritious and high protein to keep you satisfied for hours!
Puree the following:
- 1 ripe avocado
- 1 cup shelled edamame, cooked and pureed in blender
- 2-3 tbsp. green onion or red onion – whichever you prefer
- 1/4 tsp smoked paprika
- 1/4 tsp garlic powder or fresh garlic
- juice from 1 lime
- salt and pepper to taste
- dash of hot sauce if you like!
Spread on sprouted grain toast for a high protein avocado toast, dip whole grain pita chips in it, stuff a lettuce wrap with this and other veggies, use it as a vegetable dip for an afternoon snack, or use it any way you like for a healthy high protein meat alternative 😊
